Whisk the eggs and sugar together until it forms into a foam.
Mix the skyr and the egg mixture together.
Whip the cream and add it to the mixture. Add the vanilla extract/sugar, then Mix it together carefully with a spatula.
Pour the coffee into a large bowl and dip the lady fingers in one by one, then lay them on your chosen dish/form.
On top of the lady fingers add half of the skyr mixture, then sift cocoa and sprinkle the chopped chocolate on top as well. Then repeat the process until the mixture has finished.
Then put the skyramisu into the fridge for at least 4hours, best is to keep it there overnight.
